I know I was able to on the last host I used and was wondering..do we have the ability to have our own 403 (or might be 404) error page?

Yes, this is possible. There's a tute here, it works the same for 403 as well.

I do believe however, that you must edit this/upload from an ftp client. I dont think the zymic control panel allows you to edit it directly. (im not sure if the tutorial mentioned that)

Probably right - I don't think it can deal with hidden files.
