Anyone know why I am getting this error when I try to install phpBB2? I can't even get to the installation screen for some reason.. I've install forums on many other servers elsewhere, and it works fine.

Looks like you're missing the file 'config.php', never installed phpbb myself, but that's what the error is stating.
Try re-uploading all the files again or check for missing file.

FileZilla didn't upload all the files and I didn't reupload all of the files that failed.. But I might just try phpBB3 since this still isn't working to well for some reason and it usually goes perfect.
